Here are a few definitions to tackle the wine
world :

-Cep (vinestock) : vine
plant
-Cépage (variety of vine/grapes) : the vine from
which wine is produced is a species of vitis-vinifera of which
there are many varieties. For example Cinsault and Grenache are
"cépages". The notion of wine in France is closely
related to the vineyards and variety of vines.
-Cru : a vineyard or a region.
-Moût (Must) : the separated grape juice after having
been pressed before or just at the beginning of its fermentation.
-Tanin (Tannin) : bitter and harsh taste of certain fruit
or vegetables.
-Terroir (vineyard/soil) : is a combination of natural
elements : the soil, the climate, the relief, the exposure...
-Vin (Wine) : natural product obtained by the total or
partial alcoholic fermentation of fresh grapes or of must.
-Vin d'Appellation d'Origine Contrôlée (A.O.C)
(wine of guaranteed vintage) : the A.O.C. guarantee is a French
quality label and depends on :
-the vineyard : a defined region, commune or vineyard.
-the variety of vines : for each quality label there is
a precise variety of vine and vineyard.
-the method of the wine grower : the methods of cultivating
the vine and winemaking...
-Vinification (winemaking) : the processes used to transform
the grapes into wine.
-Vin de Pays (regional wine) : different from the table
wine it has a regional gaurantee. It can only come from one delimited
French wine-producing area. The wine has to undergoe an organoleptic
examination and be tasted by an expert commission.

The Ramatuelle Vineyards
Over 1850 acres of plains and hills are cultivated
with vines (20% of the commune) at Ramatuelle.
This traditional Provençal activity goes back to 600 B.C.
when the Greeks planted the first vines in this region. It is now
the second economic activity of the commune with a production of
40 000 hl/year partly exported.
In 1954 the local wine cooperative "Les Celliers des Vignerons
de Ramatuelle" was created so that the small producers could
benefit from new technics such as a bottling line and a good quality
of winemaking.
Some of the vineyards at Ramatuelle have the A.O.C (wine of garanteed
vintage) label .

There are 4 vineyards and a wine cooperative at
Ramatuelle for you to discover quality wines :
Les Celliers des Vignerons de Ramatuelle :
(wine cooperative) 70% of their production
is rosé, 25% red and 5% white. Out of a general production
of 20 000 hectolitres, the cellar makes 15 000 hl of AOC Côtes
de Provence and 5 000 hl of local wine.
The leading variety of grape is the Tibouren and the rest of the
production is made of the vintage varieties : Grenache, Syrah, Cinsault,
Mouvèdre, Carignan and Merlot.
The special touch of the " Celliers" is that they have
recreated an amphora-form bottle : the Roman "balsanaire",
a copy of an ancient bottle.
Château des Marres :
On the "route des plages" opposite
the Bay of Pampelonne. This family estate combines authenticity
and modernism. They produce red, white and rosé A.O.C. Côtes
de Provence.
The rosé and the white wine are made from noble varieties
of grapes at a low temperature giving the wine a delicate subtle
taste and a remarkable aroma. The red wine is made in the traditional
oak casks .
Cinsault, Grenache, Syrah, Mouvèdre, Cabernet Sauvignon,
Tibouren and Rolle are the main varieties
of this vineyard.
Le Château de Pampelonne :
The origins of the castle goe back to the 17th
century. The wine produced is a Côte de Provence A.O.C. The
varieties are Tibouren, Cinsault, Grenache, Syrah and Mouvèdre
to which are added Rolle and Ugni.
Domaine des Tournels :
This vineyard has existed for several generations
and is farmed by the BOLOGNA family. They produce red, white and
rosé A.O.C. Côtes de Provence.
The rosés : the grapes are picked off from the bunch and
are fermented at a low temperature giving the wine an elegant fruity
taste. The presence of Tibouren gives the wine a typical local flavour.
The rosés are made with black grapes : Grenache, Cinsault,
Tibouren.
The red wines are made with the varieties
: Syrah, Cabernet Sauvignon
The white wines are made by direct pressing of white grapes : Rolle,
Ugni blanc
Domaine de la Tourraque :
This vineyard is situated in a listed site in between the Cape Lardier
and the Cape Taillat upto the Bay of Briande and is farmed by the
Brun family.
They produce red, white and rosé wines.
The white wines : the cold soaking and the low temperature fermentation
give the wine a remarkable aroma.
The red wines : owing to the different choices of varieties of grapes
and the winemaking techniques a whole palette of red wines are produced
: young fruity wines, full-bodied vintage wines, and wines left
to mature in barrels.
Domaine des Bouis :
The Domaine des Bouis is situated in the plain of Pampelonne. This
traditional wine-making family has worked many generations to obtain
the best varieties of grapes : Carignan, Syrah, Grenache, white
Carignan, Rolle.
The red wine is left to mature 10 months in casks.
The rosé and white wine are left on the lees and matured
in casks.
